Le sencha est le type de thé vert le plus courant au Japon. Son infusion verte peut développer un goût fort et amer. Il est notamment bu froid durant l'été.

Le genmaicha est un type de thé vert japonais (parfois à base de sencha) mélangé à des grains de riz grillés. Ce mélange permettait peut-être autrefois d'économiser les feuilles de thé dans des régions ou parmi des couches sociales au sein desquelles on pouvait difficilement s'en procurer. Il s'agit donc d'un thé populaire.
