Mentaiko is a very popular ingredient in Japanese cuisine, often eaten with onigiri, sake. Japanese people also like it spicy. It is made of marinated hake roe, an ingredient that looks like clumped fish eggs. Introduced in Japan after the Russo-Japanese war, the hake roe comes from Alaska ("mentai" translates as "Alaska" and "ko" as "child").

The Japanese company Yaokin has created the very popular "Umaibo" snacks, whose name means "delicious stick". These are popcorn sticks that come in a variety of flavours.
