Soumen are traditional Japanese noodles that are cooked in boiling water and then rinsed in cold water to be eaten fresh. They can either be presented on a plate separately from their broth (tsuyu), then dipped in it, or directly in the tsuyu. They are sometimes eaten hot.

Ingredients : wheat flour, wheat protein, salt/processed starch, thickener (alginate)
Preparation:
- Cold noodles: cook the noodles in 2L of boiling water between 2 minutes 30 seconds and 3 minutes 30 seconds, then switch to cold water, so that the noodles are at room temperature (or even cold)
- Hot noodles: cook the noodles in 2L of boiling water between 2 and 3 minutes
